Cheeseburger Soup

  • Greek yogurt
    4 tbsp
  • butter
    4 tbsp
  • chicken broth
    3 c
  • cubed cheese (cheddar, colby jack, mix)
    2 c
  • cubed potatoes
    4 c
  • dried basil
    1 tsp
  • dried parsley
    1 tsp
  • flour
    4 tbsp
  • ground beef
    8 oz
  • milk
    1.5 c
  • sour cream
    4 tbsp

    Cook vegetables and ground beef until brown.
    ground beef: 8 oz

    Stir in dried basil and dried parsley .
    dried basil: 1 tsp, dried parsley: 1 tsp

    Add chicken broth and cubed potatoes .
    chicken broth: 3 c, cubed potatoes: 4 c

    Bring to a boil, then simmer until potatoes are tender.

    Melt butter and stir in flour . Add milk to the butter and flour, stirring until smooth.
    butter: 4 tbsp, flour: 4 tbsp, milk: 1.5 c

    Gradually add milk mixture to the soup, stirring constantly.

    Bring to a boil and reduce heat to simmer. Stir in cubed cheese .

    When cheese is melted, add sour cream or Greek yogurt and heat through. Do not boil.
